Two ingredients are at the heart of this sauce: first, the spicy, fragrant dried chili pepper from Sichuan called erjingtiao (二荆条). This pepper is grown in Guizhou and typically used to make chili oil, for the deep amber color and strong flavor it’s able to impart to the oil.
Second, the magic of Sichuan Hanyuan peppercorn. This is what gives mala (麻辣) spices their curious tingly, numbing sensation. The Sichuan peppercorn has a lemony citrus aroma, and impart those to the sauce, on top of their tongue-numbing electricity.
